Derni\u00e8rement nous avons m\u00eame retrouv\u00e9 des faisselles (r\u00e9cipients perc\u00e9s de trous, permettant d\u2019\u00e9goutter le fromage) polonaises datant de plus de 7000 ans. Nous savons que<strong>\u00a0le fromage est l\u2019un des plus anciens aliments<\/strong> invent\u00e9 par l\u2019homme\u00a0 tout \u00e0 fait par hasard, avant le pain et le vin. \u00a0Le lait \u00e9tait transport\u00e9 \u00a0dans des caillettes (estomacs de ruminants) o\u00f9 se trouvait de la pr\u00e9sure (coagulant du lait d\u2019origine animale).<\/p>\n<p>[\/et_pb_text][\/et_pb_column][\/et_pb_row][et_pb_row column_structure=\u00a0\u00bb3_5,2_5&Prime; _builder_version=\u00a0\u00bb4.9.7&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb][et_pb_column type=\u00a0\u00bb3_5&Prime; _builder_version=\u00a0\u00bb4.9.7&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb][et_pb_text _builder_version=\u00a0\u00bb4.9.7&Prime; _module_preset=\u00a0\u00bbdefault\u00a0\u00bb]<\/p>\n<p>Ce serait au cours d\u2019un voyage qu\u2019un jour, un nomade se rendit compte que<strong>\u00a0le lait<\/strong>\u00a0s\u2019\u00e9tait\u00a0 transform\u00e9\u00a0<strong>en une substance molle<\/strong>. Ayant faim et par curiosit\u00e9, il eut l\u2019id\u00e9e de la go\u00fbter, il y trouva une saveur int\u00e9ressante. \u00a0Cette<strong>\u00a0d\u00e9couverte<\/strong>\u00a0resta\u00a0<strong>secr\u00e8te<\/strong>, d\u2019ailleurs dans l\u2019ancienne Egypte, seuls les pr\u00eatres en avaient la connaissance. Les<strong>\u00a0premiers fromages<\/strong>\u00a0auraient \u00e9t\u00e9 faits \u00e0 partir de<strong>\u00a0lait brebis<\/strong>, le premier animal \u00e0 avoir \u00e9t\u00e9 domestiqu\u00e9. Au fil du temps, au d\u00e9but de l\u2019Empire Romain la technique s\u2019est \u00e9labor\u00e9e. Pour les Romains et les Grecs riches, il devint une base alimentaire, ajout\u00e9 aux mets sucr\u00e9s ou sal\u00e9s. Puis au moyen-\u00e2ge, les fromages fut affin\u00e9s par les moines d\u2019Europe ce qui \u00a0donna naissance \u00e0 de nombreuses\u00a0 vari\u00e9t\u00e9s.<strong> La 1\u00e8re coop\u00e9rative<\/strong>\u00a0est cr\u00e9e dans le Doubs (Franche-Comt\u00e9) \u00e0 D\u00e9servilliers en<strong>\u00a01267<\/strong>. Puis en France au alentour de 1850, Charles Gervais va lancer l\u2019industrie du fromage \u00e0 p\u00e2te fra\u00eeche\u00a0: les petits suisses. La<strong>\u00a0pasteurisation est d\u00e9couverte en 1857<\/strong>\u00a0gr\u00e2ce \u00e0 L. Pasteur (chimiste biologiste) qui d\u00e9couvre que les micro-organismes provoquent la fermentation. Son acolyte E. Le 19 \u00e8me si\u00e8cle est une v\u00e9ritable r\u00e9volution dans\u00a0 le monde fromager gr\u00e2ce \u00e0 la pasteurisation. L\u2019essor des industries fromag\u00e8res est \u00e0 son heure de gloire.\u00a0<strong>La France est \u00e0 la t\u00eate de nombreux fromages<\/strong>, de nos jours\u00a0 elle en produit plus de<strong>\u00a0500\u00a0provenant du lait de brebis, de ch\u00e8vres ou de vaches\u00a0 !<\/strong><\/p>\n<p>Quant \u00e0\u00a0<strong>l\u2019origine de son nom<\/strong>, elle est\u00a0<strong>en rapport avec le moule,\u00a0<\/strong>on faisait cailler le lait dans un moule perc\u00e9 de trous. Comme le font les humains, enfin les femmes : de toutes origines\u2026.<strong>pour allaiter leur b\u00e9b\u00e9\u00a0!\u00a0!\u00a0<\/strong>La consommation des fromages est devenue une telle industrie, que les lobbyistes ont saisi l\u2019aubaine et se sont accapar\u00e9s le march\u00e9 fromager. A ce stade, il faut savoir que <strong>l\u2019animal<\/strong>\u00a0est trait\u00e9 ni plus ni moins qu\u2019<strong>en objet de rendement<\/strong>.
